1 cup cottage cheese (drained slightly if very watery)
2 large eggs
½ cup all-purpose flour (or oat flour for a healthier twist)
¼ cup grated Parmesan cheese
2 tbsp chopped green onions or chives
½ tsp garlic powder
¼ tsp salt
¼ tsp black pepper
Olive oil or neutral oil for frying

Instructions
Step 1: Make the Batter
In a large bowl, combine cottage cheese, eggs, flour, Parmesan, green onions, garlic powder, salt, and pepper.
Mix well until fully combined. The mixture should be thick but spoonable—add a little more flour if too wet.
Step 2: Heat the Pan
Heat 1–2 tablespoons of oil in a nonstick skillet over medium heat. Once hot, drop spoonfuls of the batter into the pan, flattening slightly with the back of the spoon.
Step 3: Cook Until Golden
Cook for 2–3 minutes on each side, or until golden brown and crispy. Flip carefully and cook the second side. Adjust heat as needed to avoid burning.
Step 4: Drain and Serve
Transfer to a plate lined with paper towels to drain any excess oil. Serve warm with your favorite dipping sauce or toppings.
