Ingredients
For the Potato Bites:
- 1 ½ lbs baby potatoes (gold or red), cut into bite-sized pieces
- 2 tablespoons olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
- ¼ teaspoon red pepper flakes (optional, for heat)
- 2 tablespoons grated Parmesan cheese (optional, for extra crispiness)
For the Herb Yogurt Sauce:
- 1 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh parsley, chopped
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
Step 1: Prepare the Potatoes
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a bowl, toss potatoes, olive oil, salt, black pepper, paprika, garlic powder, and red pepper flakes until well coated.
- Spread potatoes evenly on the baking sheet.
Step 2: Roast Until Crispy
- Bake for 25-30 minutes, flipping halfway, until crispy and golden brown.
- Sprinkle with Parmesan cheese in the last 5 minutes of baking for extra crunch.
Step 3: Make the Herb Yogurt Sauce
- In a bowl, whisk together Greek yogurt, lemon juice, olive oil, garlic, dill, parsley, salt, and black pepper.
- Chill in the fridge until ready to serve.
Step 4: Serve & Enjoy!
- Transfer crispy potatoes to a serving dish.
- Serve hot with the cool herb yogurt sauce on the side.
Notes
Roast at High Heat – Ensures crispy edges and a soft center.
Don’t Overcrowd the Pan – Space potatoes out for even crisping.
For Extra Flavor – Add a sprinkle of fresh garlic and parsley after roasting.
