  • 1 tbsp vegetable oil
  • 1 ½ lbs boneless chuck roast, sliced thin
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • ½ cup low-sodium soy sauce
  • 1 tsp toasted sesame oil
  • 3 tbsp light brown sugar
  • 1 ½ cups matchstick carrots
  • 2 scallions, sliced
  • 3 cups low-sodium beef stock
  • 2 packages dry ramen noodles (discard seasoning packets)
  • 1 lb broccoli

Instructions

  1. In a sauté pan, heat vegetable oil over medium-high heat. Brown half of the sliced beef for about 5 to 7 minutes until browned on all sides. Transfer to a plate and repeat with remaining beef.
  2. In a bowl, whisk together garlic, ginger, soy sauce, toasted sesame oil, and brown sugar until smooth.
  3. In a slow cooker, combine browned beef, matchstick carrots, and three-quarters of the scallions. Pour in the beef stock and prepared sauce; stir gently to mix.
  4. Cover and cook on LOW for 5 hours. In a small bowl, mix cornstarch with water until dissolved. After cooking time is complete, add broccoli and cornstarch mixture to the crock pot along with the ramen noodles.
  5. Cook on LOW for an additional 30 minutes. Stir well before serving and garnish with remaining scallions and toasted sesame seeds.
