Ingredients
- 1 tbsp vegetable oil
- 1 ½ lbs boneless chuck roast, sliced thin
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- ½ cup low-sodium soy sauce
- 1 tsp toasted sesame oil
- 3 tbsp light brown sugar
- 1 ½ cups matchstick carrots
- 2 scallions, sliced
- 3 cups low-sodium beef stock
- 2 packages dry ramen noodles (discard seasoning packets)
- 1 lb broccoli
Instructions
- In a sauté pan, heat vegetable oil over medium-high heat. Brown half of the sliced beef for about 5 to 7 minutes until browned on all sides. Transfer to a plate and repeat with remaining beef.
- In a bowl, whisk together garlic, ginger, soy sauce, toasted sesame oil, and brown sugar until smooth.
- In a slow cooker, combine browned beef, matchstick carrots, and three-quarters of the scallions. Pour in the beef stock and prepared sauce; stir gently to mix.
- Cover and cook on LOW for 5 hours. In a small bowl, mix cornstarch with water until dissolved. After cooking time is complete, add broccoli and cornstarch mixture to the crock pot along with the ramen noodles.
- Cook on LOW for an additional 30 minutes. Stir well before serving and garnish with remaining scallions and toasted sesame seeds.
