Ingredients
- 2–3 pounds chuck roast (diced into 1-inch pieces)
- 2 tablespoons olive oil
- ½ teaspoon black pepper
- ½ tablespoon garlic powder
- ½ tablespoon onion powder
- 1 packet Au Jus gravy mix
- ½ packet Lipton onion soup mix
- 14.5 ounces beef broth
- 10.5 ounces mushroom soup
- 1 tablespoon cornstarch
Instructions
- In a large mixing bowl, add the beef chunks, olive oil, black pepper, garlic powder, and onion powder. Toss until evenly coated.
- Heat olive oil in a skillet over medium-high heat. Sear the seasoned beef in batches until golden brown on all sides.
- In another bowl, combine beef broth, mushroom soup, onion soup mix, and Au Jus mix. Whisk until well blended.
- Transfer seared beef to the crockpot and pour the gravy mixture over it. Stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- To thicken the gravy, mix cornstarch with cold water in a small bowl until dissolved. Stir this mixture into the crockpot and let sit for about 5 minutes before serving.
