- 3–4 lb chuck roast
- Salt
- Pepper
- Garlic powder
- 2 tbsp butter
- 1 sliced onion
- 2 tbsp minced garlic
- 2 tbsp Worcestershire sauce
- 12 oz beef broth
- 1 package Au Jus mix
- 1½ cups beef broth
- Sub rolls
- Provolone cheese
Instructions
- Season the chuck roast on all sides with salt, pepper, and garlic powder.
- Melt butter in a skillet over medium-high heat and sear the roast until browned on all sides.
- Transfer the seared roast to your crockpot and pour 1½ cups of beef broth over it.
- In the same skillet, sauté onions and garlic, then add Worcestershire sauce, remaining beef broth, and Au Jus mix; simmer briefly.
- Pour the mixture over the chuck roast in the crockpot. Cover and cook on low for 6-8 hours until tender.
- Shred the meat with tongs or forks before assembling sandwiches with shredded meat and provolone cheese on sub rolls.
- Place assembled sandwiches in the oven briefly to melt the cheese.
