- 1/2 cup Yellow Onion (diced)
- 1 cup Baby Carrots
- 4 cups Beef Broth
- 1/4 cup Panko Bread Crumbs
- 1 Egg
- 1/4 cup Whole Milk
- 1 Package Beefy Onion Soup Mix
- 2 Russet Potatoes (peeled and diced)
- Tomato Paste
- Soy Sauce
- Onion Powder
- Garlic Powder
- Black Pepper
Instructions
- In a mixing bowl, combine panko bread crumbs and whole milk until moistened. Add ground beef, diced onions, egg, and soup mix; mix well.
- Form meatballs about 1–1½ inches in diameter.
- Sear meatballs in a skillet over medium-high heat for 1–2 minutes per side until browned.
- In the crockpot, mix beef broth with tomato paste and soy sauce. Add seared meatballs followed by potatoes and carrots.
- Cover and cook on low for 7–8 hours or on high for 4–5 hours until tender.
- For thicker gravy, whisk cornstarch with cold water and stir into the crockpot during the last 30 minutes.
