Ingredients

  • Beef Stew Meat (1 ½ lbs, cubed) – Becomes fork-tender in the slow cooker.
  • Potatoes (3 medium, diced) – Adds heartiness.
  • Carrots (3, sliced into chunks) – Brings natural sweetness.
  • Celery (2 stalks, chopped) – Enhances the broth.
  • Onion (1 large, diced) – A key flavor base.
  • Garlic (3 cloves, minced) – Adds depth to the broth.
  • Tomato Paste (2 tbsp) – Richens the broth.
  • Diced Tomatoes (1 can, 14 oz, with juice) – Adds a fresh tomato flavor.
  • Beef Broth (4 cups) – The base of the soup.
  • Worcestershire Sauce (1 tbsp) – Enhances the umami.
  • Soy Sauce (1 tbsp) – Deepens the flavor.
  • Frozen Mixed Vegetables (2 cups, peas, corn, green beans, etc.) – Adds variety and color.
  • Bay Leaves (2) – Infuses the broth with warmth.
  • Thyme (1 tsp, dried) – A classic herb for soups.
  • Paprika (1 tsp, smoked or regular) – Adds subtle warmth.
  • Salt & Black Pepper (to taste) – Essential seasoning.
  • Olive Oil (2 tbsp) – For searing the beef (optional).

Instructions

Step 1: Sear the Beef (Optional but Recommended)

Heat olive oil in a skillet over medium-high heat. Sear the beef cubes for 3–4 minutes on each side until browned. This adds extra flavor but is optional.

Step 2: Load the Slow Cooker

Add the beef, potatoes, carrots, celery, onion, garlic, tomato paste, diced tomatoes, beef broth, Worcestershire sauce, soy sauce, bay leaves, thyme, paprika, salt, and black pepper to the slow cooker. Stir to combine.

Step 3: Slow Cook to Perfection

Cover and cook on LOW for 8 hours or HIGH for 4–5 hours, until the beef is tender and vegetables are soft.

Step 4: Add the Frozen Vegetables

Stir in the frozen mixed vegetables during the last 30 minutes of cooking.

Step 5: Serve & Enjoy!

 

Remove bay leaves, ladle into bowls, and serve hot. Enjoy with crusty bread or crackers!

  • Brown the Beef First: Adds extra depth of flavor.
  • Use the Right Cut: Chuck roast or stew meat works best.
