½ cup whole milk
½ cup unsalted butter
¼ cup unsweetened cocoa powder
½ tsp salt
3 cups quick-cooking oats
1 tsp vanilla extract
1½ cups mini marshmallows

Instructions

Step 1: Prep Your Work Area
Line a baking sheet or countertop with wax paper or parchment for the cookies to set on.

Step 2: Make the Chocolate Mixture
In a medium saucepan, combine sugar, milk, butter, cocoa powder, and salt.
Stir constantly over medium heat until the mixture comes to a full rolling boil.
Once boiling, cook for 1 minute, then remove from heat.

Step 3: Add the Mix-Ins
Quickly stir in the vanilla extract and peanut butter if using, until smooth.
Stir in the oats until fully coated.
Gently fold in the mini marshmallows last, stirring just enough to mix them in—some may melt slightly, creating gooey swirls.

Step 4: Scoop and Set
Drop heaping spoonfuls of the mixture onto the prepared wax paper.
Let the cookies cool and set at room temperature for 30–45 minutes, or refrigerate to speed up the process.

Step 5: Serve
Once firm, peel off the paper and enjoy!
Store in an airtight container at room temperature for up to 5 days.
