Ingredients
- 1 baguette, sliced into 1" rounds
- 2 tablespoons olive oil
- 1 1/2 cups whole milk ricotta
- 1 tablespoon dill pickle brine
- 2 garlic cloves, finely minced
- 2 teaspoons fresh dill, chopped
- Juice of 1 lemon
- 5 dill pickles, sliced into 1/2" rounds
- Kosher salt and freshly cracked black pepper
Instructions
- Preheat your oven to 350° F (175° C) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together the ricotta, pickle brine, minced garlic, fresh dill, lemon juice, and salt. Refrigerate until needed.
- Arrange baguette slices on the baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Bake for 8-10 minutes until lightly golden.
- Remove from the oven and top each crostini with the ricotta mixture and two slices of dill pickles. Add freshly cracked black pepper on top.
- Garnish with additional fresh dill if desired and serve immediately.
