Ingredients

For the Coleslaw:
1 small head green cabbage, finely shredded
1 carrot, peeled and grated
½ small red onion, finely chopped
½ cup mayonnaise
2 tbsp apple cider vinegar
2 tbsp granulated sugar
1 tsp Dijon mustard
½ tsp salt
¼ tsp black pepper

Optional Add-ins:
½ cup chopped green bell pepper
2 tbsp celery seeds
1 tbsp finely chopped parsley


Instructions

Step 1: Prepare the Vegetables
Finely shred the cabbage using a sharp knife or mandoline slicer.
Grate the carrot and finely chop the red onion.
Place all the vegetables into a large mixing bowl.

Step 2: Make the Dressing
In a small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, Dijon mustard, salt, and black pepper.
Whisk until the dressing is smooth and creamy.

Step 3: Combine the Slaw
Pour the dressing over the cabbage, carrot, and onion.
Toss everything together thoroughly until all the vegetables are well coated with the dressing.

Step 4: Chill and Serve
Cover the bowl and refrigerate for at least 1 hour before serving.
This chilling time allows the flavors to meld and the cabbage to soften slightly.
Give the coleslaw a good stir before serving.

Use Fresh Cabbage – Freshly shredded cabbage gives the best crunch and flavor.
