- 4 large baking potatoes
- 1 pound lean ground beef
- 1 small onion (chopped)
- 1 packet taco seasoning
- 1/4 cup water
- 1/2 cup sour cream (plus extra for serving)
- 1/4 cup milk
- 1 cup shredded cheddar cheese
- 2 green onions (sliced)
- 1/2 cup salsa
Instructions
- Preheat your oven to 475°F. Scrub the baking potatoes and prick them several times with a fork.
- Bake directly on the oven rack or on a baking sheet for 60-75 minutes until soft.
- In a nonstick pan over medium heat, cook lean ground beef and chopped onion until browned. Add taco seasoning and water; stir and cook for another minute.
- Let the baked potatoes cool for 10-15 minutes, then cut off the tops and scoop out the pulp into a mixing bowl. Mash with sour cream and milk until smooth.
- Mix in three-quarters of the taco mixture and cheese, then fill the potato skins with this mixture.
- Top with remaining cheese and bake at 350°F for an additional 20-25 minutes until heated through.
