For the Casserole:

  • 3 cups cooked white or brown rice

  • 3 cups fresh or frozen broccoli florets (lightly steamed or blanched)

  • 1 ½ cups shredded cheddar cheese (divided)

  • 1 (10.5 oz) can cream of mushroom or cream of chicken soup

  • ½ cup sour cream or Greek yogurt

  • ¼ cup milk

  • 1 teaspoon garlic powder

  • Salt & pepper, to taste

  • 2 tablespoons butter (for greasing dish and optional topping)

  • ½ cup crushed crackers or breadcrumbs (optional topping)


Instructions

Step 1: Preheat & Prep

Preheat your oven to 350°F (175°C). Grease a 9×13” baking dish with butter or non-stick spray.

Step 2: Mix the Filling

In a large bowl, combine cooked rice, broccoli, 1 cup of the shredded cheese, soup, sour cream, milk, garlic powder, salt, and pepper. Mix well until everything is evenly coated.

Step 3: Assemble the Casserole

Spoon the mixture into the prepared baking dish and spread it evenly. Top with the remaining ½ cup cheese.

If using crushed crackers or breadcrumbs, sprinkle them over the top. Dot with a little extra butter for a golden crust.

Step 4: Bake

Bake uncovered for 25–30 minutes, or until hot and bubbly with melted cheese on top.
If topping begins to brown too quickly, loosely cover with foil during the last 10 minutes.

Step 5: Serve & Enjoy

Let cool for 5 minutes before serving. Enjoy it as a main dish or a hearty side.

Notes

Use Fresh or Frozen Broccoli – Just make sure it’s lightly cooked before adding so it stays tender-crisp.
Shred Your Own Cheese – Pre-shredded cheese often has anti-caking agents that affect meltiness.
Add a Protein – Stir in shredded rotisserie chicken, cooked turkey, or chickpeas to make it a full meal.
