- 3/4 cup sliced carrot

- 2/3 cup diced onion
- 1 1/4 teaspoon salt
- 1/2 teaspoon ground pepper
- 1/4 teaspoon dried thyme
- 1/4 teaspoon poultry seasoning
- 1/2 cup all-purpose flour
- 1 1/2 cups chicken broth
- 1 cup milk
- 3 cups shredded rotisserie chicken
- 1 cup peas
- 2 refrigerated pie crusts
Instructions
- Preheat your oven to 425°F.
- Boil the diced potatoes and carrots in water for about 5-8 minutes until softened; then drain.
- In a large sauté pan, melt the butter over medium heat and sauté the onions until translucent.
- Stir in the salt, pepper, thyme, and poultry seasoning. Mix in the flour for one minute.
- Gradually whisk in the chicken broth and milk; add the drained vegetables and let simmer until thickened.
- Stir in shredded chicken and peas; mix well.
- Place one pie crust in a deep dish pie plate and pour in the filling.
- Cover with the second pie crust, seal edges, crimp as desired, then cut slits for ventilation.
- Bake on a baking sheet for about 30 minutes or until golden brown.
