Ingredients

  • 1 cup peeled and diced potato
  • 3/4 cup sliced carrot
  • 1/2 cup butter
  • 2/3 cup diced onion
  • 1 1/4 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon poultry seasoning
  • 1/2 cup all-purpose flour
  • 1 1/2 cups chicken broth
  • 1 cup milk
  • 3 cups shredded rotisserie chicken
  • 1 cup peas
  • 2 refrigerated pie crusts

Instructions

  1. Preheat your oven to 425°F.
  2. Boil the diced potatoes and carrots in water for about 5-8 minutes until softened; then drain.
  3. In a large sauté pan, melt the butter over medium heat and sauté the onions until translucent.
  4. Stir in the salt, pepper, thyme, and poultry seasoning. Mix in the flour for one minute.
  5. Gradually whisk in the chicken broth and milk; add the drained vegetables and let simmer until thickened.
  6. Stir in shredded chicken and peas; mix well.
  7. Place one pie crust in a deep dish pie plate and pour in the filling.
  8. Cover with the second pie crust, seal edges, crimp as desired, then cut slits for ventilation.
  9. Bake on a baking sheet for about 30 minutes or until golden brown.
