For the Dough:

  • 1 cup cottage cheese (full-fat or low-fat)

  • ¼ cup milk

  • ¼ cup vegetable oil

  • ¼ cup granulated sugar

  • 1 tsp vanilla extract

  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

For the Filling:

  • ¼ cup unsalted butter, softened

  • ⅓ cup brown sugar (packed)

  • 2 tsp cinnamon

  • Pinch of salt

For the Glaze (Optional):

  • ½ cup powdered sugar

  • 12 tbsp milk

  • ¼ tsp vanilla extract


Instructions

Step 1: Preheat and Prep
Preheat your oven to 350°F (175°C).
Lightly grease a round baking dish or 8×8-inch pan and set aside.

Step 2: Blend the Wet Ingredients
In a blender or food processor, combine cottage cheese, milk, oil, sugar, and vanilla extract.
Blend until smooth and creamy.

Step 3: Mix the Dry Ingredients
In a large bowl, whisk together flour, baking powder, baking soda, and salt.
Pour the blended cottage cheese mixture into the dry ingredients.
Stir with a spatula until a soft dough forms. If sticky, add 1–2 more tablespoons of flour.

Step 4: Roll Out the Dough
Turn the dough out onto a lightly floured surface.
Roll into a rectangle about ¼ inch thick, roughly 10×14 inches.

Step 5: Add the Filling
Spread softened butter evenly over the dough.
In a small bowl, mix brown sugar, cinnamon, and a pinch of salt.
Sprinkle the cinnamon sugar mixture over the buttered dough.

Step 6: Roll and Slice
Starting from the long edge, roll the dough tightly into a log.
Use a sharp knife or string to cut the log into 8–10 equal rolls.
Place the rolls in the greased baking dish, spacing them slightly apart.

Step 7: Bake
Bake for 22–25 minutes, or until the tops are golden brown and the rolls are cooked through.
Let cool slightly before glazing.

Step 8: Make the Glaze (Optional)
In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
Drizzle over the warm rolls and serve.

Notes

Use a Blender – Blending the cottage cheese creates a smooth dough texture.

Don’t Overwork the Dough – Mix until just combined for soft, tender rolls.

Add Nuts or Raisins – Sprinkle chopped walnuts, pecans, or raisins inside before rolling.

Make It Healthier – Use whole wheat flour for added fiber or reduce the sugar slightly.

Serve Warm – These rolls are best enjoyed fresh and warm out of the oven.
