Ingredients

For the Base:
6 corn tostada shells (store-bought or homemade)
1 tbsp olive oil (if pan-frying your own)

For the Toppings:
1 cup refried beans (black or pinto)
½ cup shredded cheddar or Monterey Jack cheese
6 large eggs
1 tbsp butter or oil (for cooking eggs)
Salt and pepper to taste

Optional Add-Ons:
1 avocado, sliced or mashed
½ cup cherry tomatoes, halved
¼ cup red onion, finely diced
¼ cup fresh cilantro, chopped
Hot sauce or salsa of choice
Lime wedges
Pickled jalapeños
Sour cream or Greek yogurt
Shredded lettuce


Instructions

Step 1: Warm the Beans
In a small saucepan, heat the refried beans over low heat until smooth and warm.
Add a splash of water if needed to loosen the texture.

Step 2: Prep the Tostadas
If using store-bought tostada shells, warm them in the oven at 350°F (175°C) for 5 minutes to crisp up.
If using corn tortillas, brush lightly with oil and pan-fry or bake until golden and crispy on both sides.

Step 3: Cook the Eggs
Heat 1 tbsp butter or oil in a non-stick skillet over medium heat.
Crack in the eggs and cook sunny-side up, over-easy, or scrambled—your choice!
Season with a pinch of salt and pepper.

Step 4: Assemble the Tostadas
Spread a generous spoonful of warm refried beans over each tostada shell.
Sprinkle with shredded cheese while the beans are still hot so it melts.
Top each with a cooked egg.
Add any desired toppings: avocado, tomatoes, onions, cilantro, jalapeños, or salsa.

Step 5: Serve Immediately
Serve the tostadas warm with lime wedges on the side and your favorite hot sauce for an extra kick.
