  • 1 lb shrimp, peeled and deveined
  • 1 red bell pepper, sliced
  • 2 cups broccoli florets
  • 8 ounces snow peas
  • 1 small onion, chopped
  • 2 tablespoons canola oil
  • 1/4 cup low sodium chicken broth
  • 1/4 cup low sodium soy sauce
  • 2 teaspoons rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon sriracha sauce
  • 2 tablespoons honey
  • 1/8 teaspoon crushed red pepper
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon cornstarch

Instructions

  1. Prepare the shrimp by peeling and deveining them. Pat dry and season with Chinese five spice.
  2. In a bowl, whisk together chicken broth, soy sauce, rice vinegar, sesame oil, sriracha sauce, honey, crushed red pepper, garlic, ginger, and cornstarch until well combined.
  3. Heat 1 tablespoon of canola oil in a large skillet over medium-high heat. Add onions and broccoli; cook for 1-2 minutes. Add red pepper and snow peas; cook until crisp-tender.
  4. In the same skillet with another tablespoon of oil, cook the seasoned shrimp for about 1 – 1½ minutes on each side until fully cooked.
  5. Reduce heat to low; add the prepared sauce to the skillet and let it thicken slightly before adding back the vegetables and shrimp. Mix well and top with chopped scallions before serving.
