Ingredients
- 1 lb turkey sausage (mild or spicy), casings removed
- 1 tablespoon olive oil (if needed)
- 10 large eggs
- ½ cup milk (or half-and-half for creaminess)
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 cup shredded cheddar cheese (or mozzarella)
- ½ cup diced bell peppers (red, green, or yellow)
- ½ cup chopped spinach (or kale)
- ¼ cup green onions, sliced (optional, for garnish)
Instructions
Step 1: Preheat & Prep
- Preheat oven to 375°F (190°C).
- Grease a 9×13-inch baking dish with nonstick spray.
Step 2: Cook the Turkey Sausage
- In a skillet over medium heat, cook the turkey sausage until browned, breaking it into crumbles.
- If needed, add olive oil to prevent sticking. Drain excess fat and set aside.
Step 3: Whisk the Egg Mixture
- In a large bowl, whisk together eggs, milk, salt, black pepper, garlic powder, and onion powder.
Step 4: Assemble the Casserole
- Spread cooked turkey sausage evenly in the baking dish.
- Sprinkle bell peppers, spinach, and shredded cheese over the sausage.
- Pour the egg mixture over everything, making sure it’s evenly distributed.
Step 5: Bake Until Set
- Bake for 25-30 minutes, or until eggs are set and the top is golden.
- Let cool for 5 minutes, then slice and serve.
