Ingredients

  • 1 lb turkey sausage (mild or spicy), casings removed
  • 1 tablespoon olive oil (if needed)
  • 10 large eggs
  • ½ cup milk (or half-and-half for creaminess)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 cup shredded cheddar cheese (or mozzarella)
  • ½ cup diced bell peppers (red, green, or yellow)
  • ½ cup chopped spinach (or kale)
  • ¼ cup green onions, sliced (optional, for garnish)

Instructions

Step 1: Preheat & Prep

  1. Preheat oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with nonstick spray.

Step 2: Cook the Turkey Sausage

  1. In a skillet over medium heat, cook the turkey sausage until browned, breaking it into crumbles.
  2. If needed, add olive oil to prevent sticking. Drain excess fat and set aside.

Step 3: Whisk the Egg Mixture

  1. In a large bowl, whisk together eggs, milk, salt, black pepper, garlic powder, and onion powder.

Step 4: Assemble the Casserole

  1. Spread cooked turkey sausage evenly in the baking dish.
  2. Sprinkle bell peppers, spinach, and shredded cheese over the sausage.
  3. Pour the egg mixture over everything, making sure it’s evenly distributed.

Step 5: Bake Until Set

  1. Bake for 25-30 minutes, or until eggs are set and the top is golden.
  2. Let cool for 5 minutes, then slice and serve.
