Ingredients

Scale
  • 4 English muffins, halved
  • 4 large eggs (scrambled or fried)
  • ½ cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup marinara sauce (or salsa for extra flavor)
  • ½ cup cooked beef sausage, crumbled
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ½ teaspoon Italian seasoning
  • 1 tablespoon olive oil or butter
  • Fresh parsley or green onions for garnish (optional)

Instructions

Step 1: Prepare the English Muffins

Preheat your oven to 375°F (190°C).
Place the English muffin halves on a baking sheet and lightly brush with olive oil or butter for extra crispiness.

Step 2: Cook the Eggs & Sausage

  • In a skillet, cook the beef sausage over medium heat until browned. Remove and set aside.
  • In the same pan, scramble the eggs with a pinch of salt and black pepper. Cook until just set.

Step 3: Assemble the Pizzas

  • Spread a spoonful of marinara sauce onto each English muffin half.
  • Sprinkle a little cheddar and mozzarella cheese on top.
  • Add the scrambled eggs and crumbled sausage.
  • Sprinkle with garlic powder, Italian seasoning, and black pepper.
  • Top with more cheese for an extra gooey finish.

Step 4: Bake the Pizzas

Bake in the preheated oven for 8-10 minutes, or until the cheese is melted and bubbly.

Step 5: Garnish & Serve

Remove from the oven and garnish with fresh parsley or green onions if desired. Serve hot and enjoy!

Notes

  • Make it vegetarian – Skip the sausage and add sautéed mushrooms, spinach, or bell peppers.
  • Try a different sauce – Swap marinara for pesto, salsa, or garlic butter.
  • Cheese options – Use pepper jack, feta, or gouda for a different flavor.
