  • 3/4 lb top sirloin cubes
  • Salt and pepper to taste
  • 2 cups apple cider
  • 1/2 cup beef broth
  • 1 large onion (chopped)
  • 2 medium carrots (peeled and chopped)
  • 6 large potatoes
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese (shredded)
  • 3 tablespoons chives

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large pan, melt butter with olive oil over medium-high heat. Season beef with salt and pepper; brown in the pan for about 6-8 minutes.
  3. Add chopped onions and carrots, cooking for another 4-5 minutes until softened.
  4. Sprinkle flour over the mixture, stir well, then add apple cider and beef broth. Bring to a boil.
  5. Transfer to an oven-safe baking dish, cover tightly, and bake for 1 to 1½ hours.
  6. For mashed potatoes, boil peeled and chopped potatoes in salted water until tender (15-20 minutes). Drain, then mash with milk, sour cream, cheese, and chives until creamy.
  7. Serve the stew generously over mashed potatoes.
