1 sheet puff pastry, thawed
4 oz goat cheese, softened
¼ cup fig jam or fig spread
1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
1 egg (for egg wash)
1 tablespoon water
Optional: 2 tablespoons chopped walnuts or pecans


Instructions

Step 1: Preheat Oven and Prep Pan
Preheat your oven to 400°F (200°C)
Line a baking sheet with parchment paper and set aside

Step 2: Roll Out the Pastry
On a lightly floured surface, gently roll out the puff pastry into a 10×12-inch rectangle
Try to keep the edges even and smooth

Step 3: Add Filling
Spread fig jam evenly over the puff pastry, leaving a ½-inch border
Crumble goat cheese over the top
Sprinkle with thyme and chopped nuts, if using

Step 4: Roll and Slice
Starting from one long edge, tightly roll the puff pastry into a log
Slice into ½-inch thick rounds using a sharp knife or pizza cutter

Step 5: Apply Egg Wash
In a small bowl, whisk together the egg and water
Brush each pinwheel lightly with the egg wash for a shiny, golden finish

Step 6: Bake
Arrange pinwheels on the prepared baking sheet, spacing about 1 inch apart
Bake for 15–18 minutes or until puffed and golden brown
Remove from oven and let cool slightly before serving
