  • 1 cup stone-ground grits
  • 1 cup milk
  • 2 cups chicken or vegetable broth
  • 1 tomato (diced)
  • ½ cup red bell pepper (diced)

  • 1 lemon (squeezed)
  • 34 tablespoons unsalted butter
  • 12 cups white sharp cheddar cheese

Instructions

  1. Rinse the catfish fillets under cold water, pat dry, and season with salt, pepper, and Blackened seasoning.
  2. In a skillet, sauté minced garlic, diced tomato, red bell pepper, and green onion in butter or oil until softened. Add broth and lemon juice; simmer.
  3. Fry catfish fillets in another skillet until golden brown on each side.
  4. Boil water and whisk in stone-ground grits; cook until thickened. Stir in milk, butter, cheese, and salt until creamy.
