  • 3 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 6 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 6 slices of baguette or crusty bread
  • 1.5 cups shredded Gruyère or Swiss cheese

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Season beef short ribs with salt and pepper, then sear on all sides until browned (about 12 minutes total). Remove from pot.
  2. Lower heat to medium; add butter and sliced onions. Cook while stirring occasionally for 25-30 minutes until golden brown. Add minced garlic and cook for an additional minute.
  3. Return short ribs to the pot along with beef broth, Worcestershire sauce, bay leaf, and thyme. Bring to a simmer, cover, and let cook on low heat for 2-3 hours until tender.
  4. Remove short ribs, shred meat from bones, and return meat to the pot.
  5. Preheat broiler. Ladle soup into oven-safe bowls; top each with toasted bread and shredded cheese. Broil for about 2-3 minutes until cheese is bubbly.
