  • 4 yellow onions
  • 4 garlic cloves
  • 1 cup dry white grape juice
  • 6 cups beef stock
  • Olive oil
  • Gruyere cheese
  • 2 tablespoons neutral oil
  • 3 tablespoons butter
  • 2 tablespoons dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 3 tablespoons all-purpose flour
  • 2 fresh bay leaves
  • 8 sprigs thyme
  • Kosher salt and freshly ground black pepper
  • 1 demi baguette, sliced
  • 3 tablespoons olive oil
  • 2 tablespoons fresh thyme leaves

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cut beef into 2-inch cubes; season generously.
  3. Thinly slice onions using a mandoline.
  4. In a Dutch oven, heat oil and sear beef until browned; set aside.
  5. Add butter and sliced onions; caramelize until golden brown.
  6. Stir in garlic, Worcestershire sauce, dijon mustard, and flour; combine well.
  7. Pour in grape juice and simmer before adding beef stock, bay leaves, and thyme.
  8. Return beef to pot; cover and braise for about 3 hours until tender.
  9. Toast baguette slices with olive oil; top with gruyere cheese and broil until bubbly.
