Description

French Onion Chicken is a comforting and flavorful dish that elevates tender chicken with the sweetness of caramelized onions and the aromatic touch of fresh thyme. This easy-to-make recipe is perfect for family dinners or special occasions, ensuring everyone at your table will savor each bite.


Ingredients

  • 1 whole chicken
  • 2 large onions (thinly sliced)
  • 6 sprigs fresh thyme or 1 ½ tsp dried thyme
  • 2 tbsp Worcestershire sauce
  • 3 ½ tsp kosher salt
  • ½ tsp black pepper
  • 1 packet French onion soup mix
  • 3 cups chicken stock
  • 3 garlic cloves (minced)
  • 1 tbsp olive oil
  • 2 tbsp cornstarch + 3 tbsp water (mixed into a slurry)

Instructions

  1. Slice onions thinly and mince the garlic; set aside.
  2. In a large pot or slow cooker, heat olive oil over medium heat. Add onions and cook until soft and caramelized (15-20 minutes), stirring occasionally.
  3. Season the whole chicken with kosher salt, black pepper, Worcestershire sauce, and thyme.
  4. Place the seasoned chicken on top of the caramelized onions in the pot. Sprinkle French onion soup mix over the chicken.
  5. Pour chicken stock around the chicken to keep it moist during cooking.
  6. Cover and cook on low for 8 hours in a slow cooker or in an oven at 300°F (150°C) for about 4 hours until tender.
  7. Once cooked, remove the chicken to rest. Strain liquid from pot into a saucepan; mix cornstarch with water to create a slurry and add to thicken gravy over medium heat until bubbling.
  8. Shred chicken using two forks and return it to its juices before serving.
