- 1 whole chicken
- 2 large onions (thinly sliced)
- 6 sprigs fresh thyme or 1 ½ tsp dried thyme
- 2 tbsp Worcestershire sauce
- 3 ½ tsp kosher salt
- ½ tsp black pepper
- 1 packet French onion soup mix
- 3 cups chicken stock
- 3 garlic cloves (minced)
- 1 tbsp olive oil
- 2 tbsp cornstarch + 3 tbsp water (mixed into a slurry)
Instructions
- Slice onions thinly and mince the garlic; set aside.
- In a large pot or slow cooker, heat olive oil over medium heat. Add onions and cook until soft and caramelized (15-20 minutes), stirring occasionally.
- Season the whole chicken with kosher salt, black pepper, Worcestershire sauce, and thyme.
- Place the seasoned chicken on top of the caramelized onions in the pot. Sprinkle French onion soup mix over the chicken.
- Pour chicken stock around the chicken to keep it moist during cooking.
- Cover and cook on low for 8 hours in a slow cooker or in an oven at 300°F (150°C) for about 4 hours until tender.
- Once cooked, remove the chicken to rest. Strain liquid from pot into a saucepan; mix cornstarch with water to create a slurry and add to thicken gravy over medium heat until bubbling.
- Shred chicken using two forks and return it to its juices before serving.
