  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 2 large white onions, thinly sliced
  • 2 tbsp grape juice
  • 1 pound chicken breasts, pounded thin
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 4 slices provolone cheese
  • 4 slices Swiss cheese

Instructions

  1. In a large oven-safe skillet, heat butter and 1 tbsp olive oil over medium heat. Add onions and sauté for 10-15 minutes until caramelized. Stir in grape juice and set aside.
  2. Season chicken breasts with Italian seasoning, salt, and pepper.
  3. In the same skillet, add remaining olive oil and cook chicken for about 4-5 minutes on each side until golden brown. Remove from skillet.
  4. Return onions to the skillet; mix in flour and gradually whisk in beef broth until thickened.
  5. Preheat broiler. Place chicken back into sauce; top with provolone and Swiss cheeses. Broil until melted.
  6. Garnish with parsley if desired and serve immediately.
