Ingredients
For the Potatoes:

2 lbs Yukon Gold or Russet potatoes, thinly sliced

2 tbsp olive oil or butter

2 large yellow onions, thinly sliced

1 tsp sugar (helps with caramelization)

½ tsp salt

¼ tsp black pepper

1 tsp fresh thyme leaves (or ½ tsp dried thyme)

2 cloves garlic, minced

1 cup low-sodium beef or vegetable broth

1 tbsp Worcestershire sauce

1 ½ cups shredded Swiss or Gruyère cheese

¼ cup grated Parmesan cheese

1 tbsp chopped fresh parsley (for garnish)
Instructions
Step 1: Caramelize the Onions
Heat olive oil or butter in a large skillet over medium-low heat.
Add sliced onions and sugar, then cook slowly for 20–25 minutes, stirring often.
Once golden brown and soft, stir in garlic and thyme and cook for 1 more minute.
Set aside and preheat your oven to 375°F (190°C).
Step 2: Slice the Potatoes
Wash and peel the potatoes, then slice them thinly (about ⅛ inch thick) using a knife or mandoline.
Try to keep the slices uniform for even baking.
Step 3: Layer the Dish
Grease a 9×13-inch baking dish.
Layer half of the sliced potatoes evenly in the dish.
Top with half of the caramelized onions and a sprinkle of Swiss cheese.
Repeat with the remaining potatoes, onions, and more cheese.
Step 4: Add the Broth Mixture
In a small bowl, mix the broth and Worcestershire sauce.
Pour the mixture evenly over the layered potatoes.
Top everything with the remaining Swiss cheese and sprinkle with grated Parmesan.
Step 5: Bake Covered
Cover the baking dish with foil and bake in the preheated oven for 40 minutes.
This allows the potatoes to steam and soften.
Step 6: Bake Uncovered
Remove the foil and bake for another 15–20 minutes, or until the cheese is bubbly and golden brown.
Insert a knife to check if the potatoes are tender.
Step 7: Rest & Garnish
Let the dish rest for 10 minutes to set before serving.
Sprinkle with chopped fresh parsley for color and flavor.
