  • 8 flour tortillas
  • 1 cup creamy jalapeno ranch dressing
  • 2 cups street corn salad
  • Lime wedges for serving
  • 1 cup pickle juice
  • 1/2 cup buttermilk
  • 1.5 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika
  • 2 tsp salt
  • 2 tsp onion powder
  • 2 tsp black pepper
  • 1 tsp cayenne powder
  • 2 tablespoons hot sauce
  • 1.5 cups buttermilk for frying
  • peanut oil or vegetable oil for frying

Instructions

  1. Marinate chicken tenders in a mixture of pickle juice and buttermilk for at least 30 minutes.
  2. Prepare the coating by mixing flour, cornstarch, garlic powder, paprika, salt, onion powder, black pepper, cayenne powder, and hot sauce in a bowl.
  3. Heat oil in a deep frying pan over medium-high heat. Dredge marinated chicken in the coating mix and fry until golden brown (5–7 minutes). Drain on paper towels.
  4. Warm tortillas in a skillet. Assemble tacos by layering each tortilla with fried chicken, street corn salad, and jalapeno ranch dressing.
  5. Serve warm with lime wedges.
