  • 4 fresh cod filets

  • 4 Kaiser rolls
  • 2 tablespoons softened butter
  • Homemade tartar sauce
  • Boston Bibb lettuce (washed and dried)
  • 2 heirloom tomatoes (sliced)
  • 1 onion (sliced)

Instructions

  1. Heat oil in a large skillet until it reaches around 400°F (200°C).
  2. Set up three containers: one with flour mixed with blackened seasoning, one with panko breadcrumbs, and one with beaten eggs.
  3. Rinse and pat dry the cod filets thoroughly.
  4. Season the filets with salt and pepper, then coat in flour, dip in eggs, and finally cover in panko breadcrumbs.
  5. Fry the coated filets in batches for about 5 minutes per side until golden brown; drain on paper towels.
  6. Butter the Kaiser rolls and grill them until golden brown on both halves.
  7. Assemble sandwiches by spreading tartar sauce on each bun half, layering lettuce, tomato slices, onion slices, and placing the crispy fish filet on top.
