  • 34 cups vegetable oil
  • 1 cup all-purpose flour
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 large eggs
  • ⅓ cup whole milk
  • 1 cup Italian bread crumbs
  • ¾ cup panko bread crumbs
  • ¾ cup grated parmesan cheese

Instructions

  1. Thaw the ravioli by refrigerating overnight or boiling briefly. Pat dry.
  2. Set up dredging stations: mix flour, salt, and pepper in one dish; whisk eggs and milk in another; combine bread crumbs and parmesan in a third.
  3. Heat vegetable oil in a deep-sided skillet to 325°F.
  4. Dredge each ravioli first in flour, then egg mixture, followed by the breadcrumb mixture.
