For the Funfetti Pudding Layer:

  • 1 box (3.4 oz) instant vanilla pudding mix

  • 1½ cups cold milk

  • ½ cup dry Funfetti or vanilla cake mix

  • ½ cup whipped topping

  • 2 tbsp rainbow sprinkles

For the Whipped Topping Layer:

  • 2 cups whipped topping

  • 2 tbsp rainbow sprinkles

Optional Toppings:

  • Extra crushed cookies

  • More sprinkles (of course!)

  • White chocolate curls

  • Birthday candles


Instructions

Step 1: Make the Crust
In a food processor, pulse the golden sandwich cookies into fine crumbs.
Transfer to a bowl and stir in the melted butter until well combined.
Press the mixture firmly into the bottom of your baking dish to form an even layer.
Place in the fridge to chill while you prepare the next layers.

Step 2: Make the Cream Cheese Layer
In a large bowl, beat softened cream cheese, powdered sugar, and vanilla until smooth and creamy.
Fold in whipped topping gently until fully combined.
Spread this layer over the chilled crust and return to the fridge.

Step 3: Make the Funfetti Pudding Layer
In another bowl, whisk together pudding mix and cold milk until it starts to thicken.
Add the dry cake mix and almond extract (if using), and whisk again until smooth.
Fold in whipped topping and stir in sprinkles.
Spread over the cream cheese layer and smooth with a spatula.

Step 4: Add the Final Topping
Spread the remaining whipped topping over the pudding layer evenly.
Sprinkle generously with rainbow sprinkles and any extra toppings you love.
Cover and refrigerate for at least 4 hours, or overnight for best results.
