Ingredients
For the Chicken & Noodles:
- 1 lb chicken breast or thighs, thinly sliced
- 8 oz lo mein noodles (or spaghetti if unavailable)
- 1 tablespoon vegetable oil
For the Sauce:
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon honey (optional, for sweetness)
- 1 teaspoon garlic powder
- 1 teaspoon ground ginger
- 1 tablespoon water (if needed for consistency)
For the Veggies:
- 1 cup bell peppers, thinly sliced
- 1 small onion, thinly sliced
- 1 cup shredded carrots
- 2 cups broccoli florets (or any veggies you prefer)
Instructions
Step 1: Cook the Noodles
- Bring a pot of water to a boil. Cook the lo mein noodles according to the package instructions (usually about 3-4 minutes). Drain and set aside.
Step 2: Prepare the Sauce
- In a small bowl, mix together soy sauce, oyster sauce, hoisin sauce, sesame oil, rice vinegar, honey, garlic powder, and ground ginger. Add water if the sauce is too thick.
Step 3: Cook the Chicken
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add the sliced chicken and cook for 5-7 minutes until golden brown and cooked through. Remove from the skillet and set aside.
Step 4: Stir-Fry the Veggies
- In the same skillet, add a little more oil if needed and toss in the bell peppers, onion, carrots, and broccoli.
- Stir-fry the veggies for 3-4 minutes until they are tender-crisp but still vibrant.
Step 5: Combine Everything
- Add the cooked chicken and noodles back into the skillet with the veggies.
- Pour the sauce over everything and toss well to combine. Cook for another 2-3 minutes until everything is well-coated and heated through.
Step 6: Serve & Enjoy
- Serve the Chicken Lo Mein hot, garnished with sesame seeds or green onions if desired.
Notes
- Use fresh or frozen veggies: You can customize your vegetables to your liking, adding mushrooms, zucchini, or snap peas.
- Cook the noodles al dente: They will absorb the sauce better without getting too soft.
- Customize the sauce: Adjust the sweetness or saltiness by adding more honey or soy sauce, depending on your preference.
