Ingredients

For the Mushroom Filling:
1 tbsp butter
1 tbsp olive oil
1½ cups mushrooms, finely chopped (button or cremini work great)
2 cloves garlic, minced
½ tsp dried thyme
¼ tsp salt
¼ tsp black pepper

For the Chicken:
4 boneless, skinless chicken breasts
1 tsp salt
½ tsp black pepper
1 tsp paprika
1 tsp garlic powder
1 tbsp olive oil (for searing)
4 slices mozzarella cheese (or 1 cup shredded)
Toothpicks or kitchen twine (to secure the chicken)

For the Garlic Butter Sauce:
2 tbsp butter
2 cloves garlic, minced
1 tbsp fresh parsley, chopped
Juice of ½ lemon (optional for brightness)


Instructions

Step 1: Make the Mushroom Filling

  1. Heat butter and olive oil in a skillet over medium heat

  2. Add mushrooms and cook for 5–6 minutes until browned and soft

  3. Stir in garlic, thyme, salt, and pepper

  4. Cook for another 1–2 minutes until fragrant, then remove from heat and let cool slightly

Step 2: Prepare the Chicken
5. Preheat your oven to 375°F (190°C)
6. Butterfly each chicken breast by slicing it horizontally, being careful not to cut all the way through
7. Open the chicken like a book and season both sides with salt, pepper, paprika, and garlic powder

Step 3: Stuff the Chicken
8. Spoon the mushroom mixture evenly into each chicken breast
9. Add a slice (or a few tablespoons) of mozzarella cheese on top of the mushrooms
10. Fold the chicken back over and secure the edges with toothpicks or kitchen twine

Step 4: Sear the Chicken
11. Heat olive oil in an oven-safe skillet over medium-high heat
12. Sear the stuffed chicken breasts for 3–4 minutes per side until golden brown

Step 5: Bake and Finish the Sauce
13. Transfer the skillet to the preheated oven and bake for 15–20 minutes, or until the chicken reaches 165°F internally
14. While the chicken bakes, melt 2 tbsp butter in a small saucepan
15. Add minced garlic and cook for 1–2 minutes, then stir in parsley and lemon juice.

Step 6: Serve
16. Remove toothpicks or twine from the chicken
17. Drizzle with garlic butter sauce
18. Serve hot with your favorite side dishes

Use Even-Sized Chicken – This ensures all pieces cook at the same time
