Ingredients

Scale
  • 1 lb potato gnocchi – Soft and pillowy bites of deliciousness.
  • 2 boneless, skinless chicken breasts – Cut into bite-sized pieces.
  • 2 tablespoons olive oil – For cooking the chicken.
  • 4 cloves garlic, minced – The heart of the flavor!
  • 1 cup heavy cream – For a rich, creamy sauce.
  • 1 cup chicken broth – Adds depth and keeps the sauce silky.
  • ½ cup grated Parmesan cheese – For a cheesy, savory finish.
  • 1 teaspoon Italian seasoning – A perfect blend of herbs.
  • ½ teaspoon red pepper flakes (optional) – Adds a slight kick.
  • Salt and black pepper, to taste – Enhances all the flavors.
  • 1 cup spinach – For freshness and a pop of color.
  • 1 tablespoon butter – For an extra creamy touch.

Instructions

Step 1: Cook the Chicken

  1. Heat 1 tablespoon olive oil in a large skillet over medium heat.
  2. Add chicken pieces, season with salt, pepper, and Italian seasoning, and cook until golden brown and fully cooked (about 5-7 minutes).
  3. Remove the chicken from the skillet and set aside.

Step 2: Sauté the Garlic & Gnocchi

  1. In the same skillet, add 1 more tablespoon of olive oil and minced garlic. Sauté for 30 seconds until fragrant.
  2. Add the gnocchi and cook for 2-3 minutes, stirring occasionally until lightly golden.

Step 3: Make the Creamy Sauce

  1. Pour in chicken broth and heavy cream, stirring to combine.
  2. Bring to a gentle simmer, then let cook for 5 minutes until the sauce slightly thickens.

Step 4: Bring It All Together

  1. Stir in the cooked chicken, Parmesan cheese, and butter until melted and combined.
  2. Add spinach, cooking for 1-2 minutes until wilted.
  3. Sprinkle with red pepper flakes (if using) and give it a final stir.

Step 5: Serve & Enjoy!

  1. Garnish with extra Parmesan and fresh herbs, if desired.
  2. Serve warm and enjoy this cozy, garlicky delight!

Notes

Sear the gnocchi – A quick pan-fry gives them a slight crispiness before adding the sauce.
Use fresh garlic – The key to that bold, garlicky flavor!
Don’t overcook the gnocchi – It cooks quickly and should stay soft and pillowy.
Add mushrooms or sun-dried tomatoes – For even more depth of flavor!
