  • 450 g medium shrimp, deveined and tails removed
  • 450 g spaghetti, uncooked
  • 68 garlic cloves, finely minced
  • 60 ml unsalted butter
  • Approximately 3 tablespoons olive oil, divided
  • Italian seasoning to taste
  • Freshly ground black pepper to taste
  • Red pepper flakes to taste
  • Fine sea salt to taste
  • Optional: chopped fresh herbs

Instructions

  1. Cook the spaghetti: In a large pot of salted boiling water, add olive oil and fresh herbs if desired. Cook spaghetti until tender (9–11 minutes). Reserve 240 ml of pasta water, drain, and set aside.
  2. Prepare the shrimp: Rinse and pat dry the shrimp.
  3. Sauté the shrimp: Melt butter in a skillet over medium heat. Add shrimp and cook until they begin to turn pink (2–3 minutes).
  4. Add garlic: Mix minced garlic into the skillet and continue cooking until shrimp are fully cooked (5–7 minutes).
  5. Combine ingredients: Drizzle remaining olive oil over shrimp. Add cooked pasta, Italian seasoning, black pepper, red pepper flakes, and salt. Pour in reserved pasta water as needed for moisture.
  6. Toss & serve: Mix thoroughly over medium heat until evenly coated and heated through. Garnish with fresh herbs if desired.
