Ingredients
- 1/4 brown onion
- 1 small carrot
- 1 stick celery
- 4 bay leaves
- 600 g chuck steak
- 300 g chicken rashers
- 1.3 kg brown onions
- 150 ml white grape juice
- Extra Virgin Olive Oil (EVOO)
- Salt & pepper
- 300 g ziti pasta
Instructions
- Slice brown onions using a mandoline; soak in water to reduce sharpness.
- Chop 1/4 brown onion, carrot, and celery; blend with EVOO and a splash of water until smooth.
- Cut chuck steak and chicken rashers into small chunks.
- Heat Dutch oven with EVOO; cook the blended soffritto for about 10 minutes.
- Add meat; brown on medium-high heat for about 2 minutes.
- Season with salt, pepper, and bay leaves; cover and simmer for another 2 minutes.
- Deglaze the pan with white grape juice; let it reduce for about 5 minutes.
- Stir in soaked onions; season again and cook on low heat for 4 hours, stirring every half hour.
- Remove lid after 4 hours; continue cooking uncovered for another 2 hours until thickened.
- Shred the meat before serving.
