Ingredients

  • 1/4 brown onion
  • 1 small carrot
  • 1 stick celery
  • 4 bay leaves
  • 600 g chuck steak
  • 300 g chicken rashers
  • 1.3 kg brown onions
  • 150 ml white grape juice
  • Extra Virgin Olive Oil (EVOO)
  • Salt & pepper
  • 300 g ziti pasta

Instructions

  1. Slice brown onions using a mandoline; soak in water to reduce sharpness.
  2. Chop 1/4 brown onion, carrot, and celery; blend with EVOO and a splash of water until smooth.
  3. Cut chuck steak and chicken rashers into small chunks.
  4. Heat Dutch oven with EVOO; cook the blended soffritto for about 10 minutes.
  5. Add meat; brown on medium-high heat for about 2 minutes.
  6. Season with salt, pepper, and bay leaves; cover and simmer for another 2 minutes.
  7. Deglaze the pan with white grape juice; let it reduce for about 5 minutes.
  8. Stir in soaked onions; season again and cook on low heat for 4 hours, stirring every half hour.
  9. Remove lid after 4 hours; continue cooking uncovered for another 2 hours until thickened.
  10. Shred the meat before serving.
