Ingredients

  • 2 tablespoons olive oil
  • 1 1/2 lb diced beef
  • 1 large onion, diced
  • 4 garlic cloves, finely chopped
  • 1/2 cup red grape juice
  • 2 tablespoons tomato paste
  • 1 can (14 oz) crushed tomatoes
  • 1/2 teaspoon ground nutmeg
  • 2 bay leaves
  • 1 cinnamon stick
  • 2 cups chicken stock
  • 2 cups orzo pasta
  • 1/2 cup grated Kefalotyri or Parmesan cheese

Instructions

  1. Heat 1 tablespoon of olive oil in a heavy-bottomed pot over medium heat.
  2. Add the diced beef and sprinkle with salt. Sear until browned on all sides (8-10 minutes). Remove and set aside.
  3. In the same pot, add the remaining olive oil, onion, and garlic. Sauté for about 4-5 minutes until the onion is translucent.
  4. Pour in red grape juice; cook for 1-2 minutes to evaporate most of the liquid.
  5. Stir in tomato paste, crushed tomatoes, nutmeg, bay leaves, and cinnamon stick.
  6. Add chicken stock and return the beef to the pot. Bring to a boil.
  7. Reduce heat, cover, and simmer for about 45 minutes.
  8. Remove bay leaves and cinnamon stick; stir in orzo. Cook for an additional 15-20 minutes until tender.
  9. Mix in grated cheese and serve hot.
