For the Cake:

  • 1 ½ cups granulated sugar

  • 2 large eggs

  • 1 can (20 oz) crushed pineapple in juice (do not drain)

  • 2 cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 tsp vanilla extract

  • 1 cup chopped pecans or walnuts

For the Brown Sugar Glaze:

  • 1 cup brown sugar (light or dark)

  • ¾ cup evaporated milk

  • ½ cup unsalted butter

  • 1 tsp vanilla extract

Optional Garnish:

  • Extra chopped pecans

  • Whipped cream

  • A sprinkle of cinnamon


Instructions

Step 1: Preheat and Prep

  1. Preheat your oven to 350°F (175°C).

  2. Grease a 9×13-inch baking pan or line it with parchment paper.

Step 2: Mix the Cake Batter
3. In a large mixing bowl, stir together the granulated sugar and eggs until smooth.
4. Add the undrained crushed pineapple and vanilla extract. Mix well.
5. Stir in the flour, baking soda, and salt until just combined—do not overmix.
6. Fold in the chopped pecans or walnuts.
7. Pour the batter into the prepared baking pan and spread it out evenly.

Step 3: Bake the Cake
8. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
9. While the cake is baking, prepare the glaze so it’s ready to pour on a hot cake.

Step 4: Make the Brown Sugar Glaze
10. In a saucepan over medium heat, combine brown sugar, evaporated milk, and butter.
11. Bring to a gentle boil, stirring constantly, until the butter is melted and everything is fully combined (about 3-5 minutes).
12. Remove from heat and stir in the vanilla extract.

Step 5: Pour the Glaze Over the Cake
13. When the cake comes out of the oven, immediately poke holes all over the top with a fork or skewer.
14. Slowly pour the warm glaze over the hot cake, letting it soak in evenly.
15. Let the cake rest for at least 15–20 minutes so the glaze can set and fully absorb.

Step 6: Serve and Enjoy
16. Slice and serve warm or at room temperature.
17. Optional: Garnish with extra nuts, whipped cream, or a dash of cinnamon.

Notes

Use Pineapple in Juice – Avoid the syrup version, which makes the cake overly sweet.
Don’t Drain the Pineapple – The juice is essential for the cake’s moisture and flavor.
Poke Plenty of Holes – This helps the glaze soak in more thoroughly.
Let It Rest – Waiting a few minutes after glazing allows the flavors to fully develop.
Toast the Nuts – Lightly toasting the pecans or walnuts adds even more depth.
