Ingredients
For the Chicken and Vegetables:
4 boneless, skinless chicken thighs or breasts
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 red onion, cut into wedges
1 zucchini, sliced into rounds
1 cup cherry tomatoes
½ cup Kalamata olives, pitted
3 tbsp olive oil
3 cloves garlic, minced
Juice of 1 lemon
1 tbsp dried oregano
1 tsp paprika
1 tsp salt
½ tsp black pepper
Optional Garnishes:
Fresh parsley, chopped
Crumbled feta cheese
Extra lemon wedges
Instructions
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C).
Line a large sheet pan with parchment paper for easy cleanup.
Step 2: Marinate the Chicken
In a large mixing bowl, whisk together olive oil, garlic, lemon juice, oregano, paprika, salt, and pepper.
Add the chicken thighs or breasts and toss to coat well.
Let it marinate while you prepare the vegetables.
Step 3: Prepare the Vegetables
Add the sliced peppers, onion, zucchini, and cherry tomatoes to the bowl with the leftover marinade.
Toss to coat the vegetables evenly.
Step 4: Arrange on the Sheet Pan
Place the marinated chicken pieces in the center of the sheet pan.
Spread the vegetables around the chicken.
Sprinkle the olives over the vegetables.
Step 5: Roast
Roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C) and the vegetables are tender and slightly caramelized.
For extra color, broil for the last 2 minutes, watching carefully.
Step 6: Garnish and Serve
Remove from the oven and sprinkle with fresh parsley and crumbled feta cheese if desired.
