  • 1 1/2 pounds Yukon Gold potatoes
  • 1 pound fresh green beans
  • 1/4 cup olive oil
  • 1/2 teaspoon dried dill
  • 1 teaspoon dried chives
  • 1 teaspoon dried parsley
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon freshly cracked black pepper

Instructions

  1. Preheat oven to 400°F and line a sheet pan with parchment paper.
  2. In a large bowl, mix olive oil with dried herbs and spices.
  3. Cube the Yukon Gold potatoes and coat them in the herb oil mixture.
  4. Spread seasoned potatoes on the sheet pan and bake for 15 minutes.
  5. Prepare green beans by cutting them into halves; toss them in the remaining herb oil mixture.
  6. After 15 minutes, add green beans to the sheet pan with potatoes and bake for another 15-20 minutes until tender.
