For the Chicken & Veggie Skewers:

  • 1 ½ lbs boneless, skinless chicken breasts (or thighs), cut into 1-inch cubes
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, sliced into rounds
  • 1 red onion, cut into chunks
  • 8 cherry tomatoes
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • ½ teaspoon red pepper flakes (optional, for heat)

For the Herb Dip:

  • 1 cup Greek yogurt (or sour cream)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

Step 1: Marinate the Chicken

  1. In a bowl, whisk together olive oil, lemon juice, garlic, salt, black pepper, oregano, smoked paprika, and red pepper flakes.
  2. Add chicken pieces, tossing to coat. Cover and marinate for at least 30 minutes (or up to 4 hours for extra flavor).

Step 2: Prepare the Skewers

  1. Preheat grill to medium-high heat (about 400°F/200°C).
  2. Thread chicken, bell peppers, zucchini, onion, and cherry tomatoes onto skewers, alternating for color.

Step 3: Grill the Skewers

  1. Lightly oil the grill grates.
  2. Place skewers on the grill and cook for 10-12 minutes, turning every 3-4 minutes, until chicken is fully cooked (internal temp 165°F/75°C).

Step 4: Make the Herb Dip

  1. In a bowl, mix Greek yogurt, olive oil, lemon juice, garlic, parsley, dill, salt, and black pepper. Stir until smooth.

Step 5: Serve & Enjoy!

  1. Remove skewers from the grill and let rest for 5 minutes.
  2. Serve hot with the cool herb dip on the side.

Notes

Soak Wooden Skewers – Prevents burning by soaking for 30 minutes before grilling.
Use Fresh Herbs in the Dip – Enhances the flavor with a bright, fresh taste.
Marinate Longer for More Flavor – Let the chicken soak for up to 4 hours.
For Extra Creaminess – Add a spoonful of mashed avocado to the dip.
