Ingredients
For the Chicken & Veggie Skewers:
- 1 ½ lbs boneless, skinless chicken breasts (or thighs), cut into 1-inch cubes
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 zucchini, sliced into rounds
- 1 red onion, cut into chunks
- 8 cherry tomatoes
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried oregano
- ½ teaspoon smoked paprika
- ½ teaspoon red pepper flakes (optional, for heat)
For the Herb Dip:
- 1 cup Greek yogurt (or sour cream)
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
Step 1: Marinate the Chicken
- In a bowl, whisk together olive oil, lemon juice, garlic, salt, black pepper, oregano, smoked paprika, and red pepper flakes.
- Add chicken pieces, tossing to coat. Cover and marinate for at least 30 minutes (or up to 4 hours for extra flavor).
Step 2: Prepare the Skewers
- Preheat grill to medium-high heat (about 400°F/200°C).
- Thread chicken, bell peppers, zucchini, onion, and cherry tomatoes onto skewers, alternating for color.
Step 3: Grill the Skewers
- Lightly oil the grill grates.
- Place skewers on the grill and cook for 10-12 minutes, turning every 3-4 minutes, until chicken is fully cooked (internal temp 165°F/75°C).
Step 4: Make the Herb Dip
- In a bowl, mix Greek yogurt, olive oil, lemon juice, garlic, parsley, dill, salt, and black pepper. Stir until smooth.
Step 5: Serve & Enjoy!
- Remove skewers from the grill and let rest for 5 minutes.
- Serve hot with the cool herb dip on the side.
Notes
Soak Wooden Skewers – Prevents burning by soaking for 30 minutes before grilling.
Use Fresh Herbs in the Dip – Enhances the flavor with a bright, fresh taste.
Marinate Longer for More Flavor – Let the chicken soak for up to 4 hours.
