- 1 pint cherry tomatoes (quartered)
- ¼ cup fresh basil (chiffonade style)
- 3½ Tbsp olive oil (divided)
- 1 tsp dried oregano
- 8 oz. fresh mozzarella pearls
- 1 package AdapTable® Smokey apple juice Beef Sirloin Steak
- 1 loaf rustic bread
- ½ tsp kosher salt
- ¼ tsp black pepper
- Optional: chopped Italian parsley (for garnish)
Instructions
- Preheat the grill to medium-high heat (375°F).
- In a medium mixing bowl, combine cherry tomatoes, basil, ½ tablespoon olive oil, oregano, and mozzarella; toss well.
- Grill the beef sirloin for about 3-4 minutes per side until it reaches an internal temperature of 145°F. Let it rest for at least 3 minutes before cubing.
- Reduce grill heat to medium (325°-350°F). Slice the rustic bread into thick slices and brush one side with remaining olive oil; grill each slice for about 1-2 minutes until crispy.
- Assemble by placing cubed steak on each grilled bread slice topped with tomato mixture; season with salt and pepper.
- Garnish with parsley if desired and serve warm.
