  • 16 oz. ribeye steak
  • 1 cup green enchilada sauce
  • 2 packets microwaveable brown rice
  • 1 can black beans
  • 16 oz. mini bell peppers
  • ½ Tbsp vegetable oil or canola oil
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ¼ tsp paprika
  • ½ Tbsp extra-virgin olive oil
  • 1 Tbsp fresh lime juice
  • ½ tsp ground cumin
  • ¼ tsp dried oregano
  • ¼ tsp smoked paprika
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. In a mixing bowl, combine vegetable oil, salt, black pepper, onion powder, garlic powder, and paprika.
  2. Add the ribeye steak to the marinade and let it sit for 15 minutes.
  3. Grill mini bell peppers in olive oil over medium-high heat until charred (about 5-7 minutes).
  4. Grill marinated steak for 4-5 minutes per side for medium-rare; let rest before slicing.
  5. Prepare brown rice as directed on the package; warm black beans in a saucepan.
  6. Assemble bowls with rice at the base, topped with bell peppers, sliced steak, black beans, enchilada sauce, lime juice, and herbs.
