Ingredients
For the Casserole:
3 cups cooked chicken, shredded (rotisserie or leftovers work great)
1 (32 oz) bag frozen hashbrown potatoes, thawed
1 can (10.5 oz) cream of chicken soup (or homemade equivalent)
1 cup sour cream
1½ cups shredded cheddar cheese
½ cup milk
½ tsp garlic powder
½ tsp onion powder
Salt and pepper to taste
For the Topping:
1 cup crushed cornflakes or Ritz crackers
2 tbsp melted butter
2 tbsp chopped fresh parsley (optional for garnish)
Optional Add-ins
1 cup frozen peas or corn
1 cup sautéed mushrooms
½ cup chopped green onions
1 cup cooked broccoli florets
1 tsp paprika or chili flakes for heat
Instructions
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or a little butter.
Step 2: Mix the Base
In a large bowl, combine the cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper. Stir in the shredded chicken, thawed hashbrowns, and 1 cup of the shredded cheese. Mix well until evenly combined.
Step 3: Fill the Baking Dish
Spoon the mixture into the prepared baking dish and spread it out evenly. Sprinkle the remaining ½ cup of cheese on top.
Step 4: Add the Crunchy Topping
In a small bowl, mix the crushed cornflakes (or cracker crumbs) with melted butter. Sprinkle the mixture evenly over the top of the casserole.
