Ingredients

For the Foil Packets:
2 boneless, skinless chicken breasts (cut into 1-inch pieces)
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 zucchini, sliced into half-moons
1 red onion, cut into wedges
1½ cups fresh pineapple chunks
½ cup BBQ sauce (your favorite brand)
1 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
½ tsp smoked paprika
Salt and black pepper to taste
1 tbsp chopped fresh parsley (for garnish)
Lime wedges (optional, for serving)


Instructions

Step 1: Preheat the Grill or Oven
Preheat your grill to medium-high heat (about 400°F), or preheat your oven to 400°F if cooking indoors.

Step 2: Prepare the Ingredients
In a large bowl, toss the chicken pieces with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
In a separate bowl, mix the bell peppers, zucchini, red onion, and pineapple chunks.

Step 3: Assemble the Foil Packets
Tear four large sheets of heavy-duty foil (about 12×18 inches).
Evenly divide the chicken and veggie-pineapple mixture among the foil sheets.
Drizzle each with BBQ sauce (about 2 tbsp per packet).
Fold the sides of the foil over the mixture, sealing completely to create a closed packet.

Step 4: Cook the Packets
Grill: Place the foil packets on the grill, cover, and cook for 18–20 minutes, flipping halfway through.
Oven: Place packets on a baking sheet and bake for 25 minutes, or until chicken is fully cooked and veggies are tender.

 

Step 5: Serve and Garnish
Carefully open each packet (watch for steam).
Sprinkle with fresh parsley and a squeeze of lime juice if desired.
Serve directly from the foil or transfer to a plate.

Cut Ingredients Evenly – Ensures everything cooks at the same rate.
Use Heavy-Duty Foil – Prevents tearing and leaking.
