Ingredients
For the Oat Base & Crumble
- 1 ½ cups old-fashioned oats
- 1 cup whole wheat flour (or oat flour for gluten-free option)
- ½ teaspoon cinnamon
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¼ cup melted coconut oil or unsalted butter
- ⅓ cup honey or maple syrup
- 1 teaspoon vanilla extract
For the Strawberry Filling
- 2 cups fresh strawberries, diced
- 1 tablespoon cornstarch (or arrowroot powder)
- 1 tablespoon honey or maple syrup
- 1 teaspoon lemon juice
Instructions
Step 1: Prepare the Oat Crumble
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix oats, flour, cinnamon, baking soda, and salt.
- Add melted coconut oil, honey, and vanilla extract, stirring until well combined.
Step 2: Make the Strawberry Filling
- In another bowl, toss diced strawberries with cornstarch, honey, and lemon juice.
Step 3: Assemble the Bars
- Press ⅔ of the oat mixture firmly into the baking pan to form a crust.
- Spread the strawberry filling evenly over the crust.
- Sprinkle the remaining ⅓ of the oat mixture on top.
Step 4: Bake & Cool
- Bake for 25-30 minutes or until the top is golden brown.
- Let cool completely before slicing into bars.
Notes
Use Fresh or Frozen Strawberries – If using frozen, thaw and drain excess liquid before mixing.
Make It Gluten-Free – Swap whole wheat flour for oat flour.
Add Extra Flavor – Mix in chopped nuts or a dash of nutmeg.
For a Crunchier Texture – Bake an extra 5 minutes until golden brown.
