Ingredients
For the Biscuits:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ tsp black pepper
- ½ cup (1 stick) cold unsalted butter, cubed
- ¾ cup cottage cheese
- ⅓ cup milk or buttermilk
- 1 large egg
- ½ tsp garlic powder (optional)
For the Herbs:
- 2 tbsp fresh chives, chopped
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped (or thyme for an earthy touch)
Instructions
1. Preheat & Prepare:
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
2. Mix Dry Ingredients:
- In a large bowl, whisk together flour, baking powder, baking soda, salt, pepper, and garlic powder.
3. Cut in Butter:
- Add cold cubed butter to the flour mixture.
- Use a pastry cutter or fork to blend until the mixture resembles coarse crumbs.
4. Add Wet Ingredients:
- In a separate bowl, whisk together cottage cheese, milk, and egg.
- Pour into the flour mixture and gently stir until just combined.
5. Fold in Herbs:
- Gently mix in chives, parsley, and dill.
- Avoid overmixing to keep the biscuits light and tender.
6. Shape the Biscuits:
- Drop spoonfuls of dough onto the prepared baking sheet OR roll out and cut into circles.
7. Bake & Enjoy:
- Bake for 12-15 minutes or until golden brown.
- Brush with melted butter for extra flavor!
