Ingredients

  • 2 cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 tsp ground cinnamon

  • 2 tbsp instant espresso powder (or instant coffee granules)

  • ¾ cup unsalted butter, softened

  • ¾ cup brown sugar, packed

  • ¼ cup granulated sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 tbsp milk

  • 1 cup semi-sweet chocolate chips

  • Optional: powdered sugar or cocoa powder for dusting


Instructions

Step 1: Preheat & Prep

  1. Preheat your oven to 350°F (175°C).

  2. Line baking sheets with parchment paper and set aside.

Step 2: Combine Dry Ingredients

  1. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and espresso powder.

  2. Set aside.

Step 3: Cream the Butter & Sugars

  1. In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2–3 minutes).

  2. Add the egg, vanilla extract, and milk. Beat until well combined.

Step 4: Mix the Dough

  1. Gradually add the dry ingredients to the wet ingredients.

  2. Mix until just combined—do not overmix.

  3. Fold in the chocolate chips evenly throughout the dough.

Step 5: Scoop & Bake

  1. Scoop about 1 to 1½ tablespoons of dough per cookie and place on prepared baking sheets about 2 inches apart.

  2. Bake for 9–11 minutes, or until the edges are set and the centers look just slightly underbaked.

  3. Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.

Step 6: Optional Finishing Touch

  1. Once cooled, lightly dust with powdered sugar or cocoa powder for a coffeehouse-style finish.

Notes

Don’t Overbake – For soft, chewy centers, pull them out when the edges are golden but the centers are still soft.
Chill the Dough (Optional) – If you have time, chill the dough for 30 minutes for thicker cookies.
Use Fresh Espresso Powder – For the most robust flavor.
Customize the Chips – Try white chocolate or dark chocolate for a fun twist.
