  • 3 bay leaves
  • 2 cups beef broth
  • ⅓ cup balsamic vinegar
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 6 cloves garlic (minced)

Instructions

  1. Preheat the oven to 325°F.
  2. Season the chuck roast generously with salt and pepper on all sides.
  3. Heat oil in a large skillet over medium-high heat; sear the roast for about 5-6 minutes per side until golden brown.
  4. Transfer the roast to a 4-quart baking casserole pan.
  5. Add sliced onions, fresh herbs, and bay leaves around the roast.
  6. In a microwave-safe bowl, warm the beef broth; stir in balsamic vinegar, Worcestershire sauce, honey, mustard, garlic, salt, and pepper.
  7. Pour the liquid over the roast and cover tightly with a lid or foil.
  8. Braise in the oven for approximately 3.5 hours until very tender.
  9. Remove from the oven and shred meat using two forks, mixing in juices before serving.
