  • 400 grams boneless chicken breast or thigh
  • ¼ tsp white pepper
  • 1 tbsp soy sauce
  • 1 egg
  • 1 cup cornstarch
  • 4 tbsp honey
  • 4 tbsp butter
  • 23 cloves garlic
  • 1 tbsp brown sugar
  • 1 tbsp sesame oil
  • Neutral oil for frying

Instructions

  1. Cut the chicken into bite-size pieces and combine with egg, soy sauce, and white pepper in a bowl. Mix well.
  2. Coat the chicken with cornstarch until evenly covered.
  3. Heat neutral oil in a deep frying pan to 350°F (180°C). Fry chicken pieces for about 2 minutes until golden, then remove and let cool before refrying for an additional 2–3 minutes until crispy.
  4. In another pan, melt butter and sauté minced garlic until fragrant. Stir in honey, brown sugar, soy sauce, sesame oil, and cornstarch slurry; cook until thickened.
  5. Toss the fried chicken in the sauce to coat thoroughly before serving.
