Ingredients
For the Marinade:

3 tbsp honey

Juice and zest of 2 limes

2 tbsp olive oil

2 cloves garlic, minced

½ tsp ground cumin

½ tsp paprika

¼ tsp chili flakes (optional, for a kick)

Salt and black pepper to taste
For the Foil Packets:

4 tilapia fillets (about 5–6 oz each)

2 cups corn kernels (fresh, canned, or thawed from frozen)

1 cup cherry tomatoes, halved

1 red bell pepper, diced
-
1 zucchini, sliced into half-moons

½ red onion, thinly sliced
-
2 tbsp fresh cilantro, chopped

Lime wedges, for serving
Instructions
Step 1: Make the Honey-Lime Marinade

In a mixing bowl, whisk together honey, lime juice and zest, olive oil, garlic, cumin, paprika, chili flakes, salt, and pepper.

Taste and adjust seasoning if needed.
Step 2: Prep the Foil Packs

Preheat oven to 400°F (200°C), or preheat your grill to medium-high.

Tear out 4 large sheets of foil, about 12 x 16 inches each.

Divide the corn, cherry tomatoes, bell pepper, zucchini, and red onion evenly among the foil sheets, placing the veggies in the center.
Step 3: Add the Tilapia & Marinade

Pat the tilapia fillets dry with paper towels.

Place one fillet on top of each veggie pile.

Spoon the honey-lime marinade evenly over each fillet, coating the top and letting some drip down onto the veggies.
Step 4: Fold the Foil Packs

Fold the sides of the foil over the fish and vegetables, sealing the edges tightly to create a secure packet.

Step 5: Cook the Packets
Oven Method:
